Description

Delightful and colorful Rainbow Cheesecake Bars with a creamy cheesecake filling on a crunchy Oreo base, topped with vibrant whipped cream.


Ingredients

  • 2 packets (260g) Golden Oreos
  • 1/2 cup (125g) unsalted butter, melted
  • 1/4 cup (50g) rainbow sprinkles
  • 1 block (250g) cream cheese, softened
  • 1 cup (200g) white chocolate, melted
  • 1 cup (250ml) heavy cream
  • 1/2 cup (125g) mascarpone cheese
  • 1 tsp vanilla extract
  • 1/2 cup (50g) rainbow sprinkles (for topping)
  • 1 1/4 cups (310ml) heavy cream (for whipped topping)
  • 1/2 cup (125g) mascarpone cheese (for whipped topping)
  • 1 tsp vanilla extract (for whipped topping)
  • Food gel (yellow, orange, pink, blue, green) – 2 drops of each color

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the Golden Oreos in a food processor and blend into fine crumbs.
  3. Combine the Oreo crumbs with the melted butter and 1/4 cup of rainbow sprinkles in a bowl, mixing well.
  4. Press the mixture evenly into the base of a 9×9-inch pan lined with parchment paper. Set aside.
  5. In a large mixing bowl, beat the softened cream cheese until smooth.
  6. Add the melted white chocolate, heavy cream, mascarpone cheese, and vanilla extract. Beat until smooth and fluffy.
  7. Fold in the 1/2 cup of rainbow sprinkles, then pour the cheesecake mixture over the Oreo base and smooth it out evenly.
  8. Place the pan in the fridge and allow it to set for at least 2 hours, or until firm.
  9. In a mixing bowl, beat the heavy cream, mascarpone cheese, and vanilla extract until soft peaks form.
  10. Divide the whipped cream into five separate bowls. Add 2 drops of each food gel color (yellow, orange, pink, blue, green) to each bowl, and stir until evenly colored.
  11. Transfer each colored whipped cream into piping bags fitted with star tips.
  12. Once the cheesecake layer is fully set, pipe the rainbow whipped cream on top in colorful patterns.
  13. Slice the cheesecake into 9 bars and serve.

Notes

Chill the bars for the best texture and serve with extra rainbow sprinkles or a drizzle of chocolate sauce.
