Delightful and colorful Rainbow Cheesecake Bars with a creamy cheesecake filling on a crunchy Oreo base, topped with vibrant whipped cream.

- 2 packets (260g) Golden Oreos
- 1/2 cup (125g) unsalted butter, melted
- 1/4 cup (50g) rainbow sprinkles
- 1 block (250g) cream cheese, softened
- 1 cup (200g) white chocolate, melted
- 1 cup (250ml) heavy cream
- 1/2 cup (125g) mascarpone cheese
- 1 tsp vanilla extract
- 1/2 cup (50g) rainbow sprinkles (for topping)
- 1 1/4 cups (310ml) heavy cream (for whipped topping)
- 1/2 cup (125g) mascarpone cheese (for whipped topping)
- 1 tsp vanilla extract (for whipped topping)
- Food gel (yellow, orange, pink, blue, green) – 2 drops of each color
Instructions
- Preheat your oven to 350°F (175°C).
- Place the Golden Oreos in a food processor and blend into fine crumbs.
- Combine the Oreo crumbs with the melted butter and 1/4 cup of rainbow sprinkles in a bowl, mixing well.
- Press the mixture evenly into the base of a 9×9-inch pan lined with parchment paper. Set aside.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the melted white chocolate, heavy cream, mascarpone cheese, and vanilla extract. Beat until smooth and fluffy.
- Fold in the 1/2 cup of rainbow sprinkles, then pour the cheesecake mixture over the Oreo base and smooth it out evenly.
- Place the pan in the fridge and allow it to set for at least 2 hours, or until firm.
- In a mixing bowl, beat the heavy cream, mascarpone cheese, and vanilla extract until soft peaks form.
- Divide the whipped cream into five separate bowls. Add 2 drops of each food gel color (yellow, orange, pink, blue, green) to each bowl, and stir until evenly colored.
- Transfer each colored whipped cream into piping bags fitted with star tips.
- Once the cheesecake layer is fully set, pipe the rainbow whipped cream on top in colorful patterns.
- Slice the cheesecake into 9 bars and serve.
Notes
Chill the bars for the best texture and serve with extra rainbow sprinkles or a drizzle of chocolate sauce.
