- 500 g beef (chuck, brisket, or neck) cut into pieces
- 3 potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 tomatoes, blended or grated
- 1 tablespoon tomato paste
- 1 bouquet garni (thyme, bay leaf)
- 1 bouillon cube (optional)
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- 1 chili pepper (optional)
- Salt to taste
- 3 tablespoons oil
- 500 ml water or broth
Instructions
- In a pot, heat the oil and brown the beef pieces until they are golden.
- Add the onion and garlic, sautéing for 2 minutes.
- Stir in the blended tomatoes and tomato paste, then season with pepper, paprika, ginger, and the bouillon cube, if using. Mix well.
- Add the bouquet garni and cover with water or broth. Let it simmer on low heat for about 45 minutes to 1 hour, adding water if necessary.
- Add the potatoes and carrots, cooking for another 20 minutes, until the vegetables are tender.
- Adjust the seasoning, remove the bouquet garni, and sprinkle with chives or parsley. Serve hot with white rice.
Notes
For extra flavor, consider adding other vegetables like peas or green beans. Use cornstarch for a thicker stew if desired.
