Ingredients

  • 1 pound beef or pork roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups beef or chicken broth
  • 2 pounds potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 4 tablespoons butter
  • Gravy mix or flour for thickening (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the roast with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat and sear the roast on all sides until browned.
  3. Add broth to the skillet and cover it with a lid or foil. Roast in the oven for about 90 to 120 minutes, or until it reaches your desired level of doneness.
  4. Meanwhile, boil the potatoes in salted water until tender. Drain and return to the pot.
  5. Mash the potatoes with milk and butter until creamy. Season with salt and pepper to taste.
  6. For gravy, you can use a prepared mix or make a roux with some of the roast drippings. Serve the roast sliced with mashed potatoes and gravy on the side.

Notes

For creamier mashed potatoes, add more butter and milk to your preference. Use a meat thermometer to check the roast’s doneness.
