Description

Ingredients

  • 6 large eggs
  • 1/4 cup milk (or dairy-free alternative)
  • 1 cup fresh spinach, chopped
  • 1/3 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs and milk.
  3. Stir in the chopped spinach and crumbled feta.
  4. Pour the mixture evenly into the muffin tin cups, filling them about 2/3 full.
  5. Bake for 15-20 minutes, or until the egg muffins are set and lightly golden on top.
  6. Remove from the oven and let cool slightly before removing from the tin.
