Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup green beans, trimmed and halved
  • 1 cup corn (fresh or frozen)
  • 1/2 cup peas (fresh or frozen)
  • 1/2 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Sauté onion and garlic until soft.
  3. Add carrots, celery, and potatoes. Cook for 5 minutes.
  4. Stir in the diced tomatoes, vegetable broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add green beans, corn, and peas. Simmer for another 10 minutes or until all the vegetables are tender.
  7. Adjust seasoning to taste and serve warm!

Notes

Feel free to customize the vegetables based on what you have available. Consider adding spinach, zucchini, or bell peppers for additional flavor.
