Ingredients

- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 medium potatoes, diced
- 1 (14.5 oz) can diced tomatoes
- 4 cups vegetable broth
- 1 cup green beans, trimmed and halved
- 1 cup corn (fresh or frozen)
- 1/2 cup peas (fresh or frozen)
- 1/2 tsp dried thyme
- Salt & pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Sauté onion and garlic until soft.
- Add carrots, celery, and potatoes. Cook for 5 minutes.
- Stir in the diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add green beans, corn, and peas. Simmer for another 10 minutes or until all the vegetables are tender.
- Adjust seasoning to taste and serve warm!
Notes
Feel free to customize the vegetables based on what you have available. Consider adding spinach, zucchini, or bell peppers for additional flavor.
