Ingredients

- 4 salmon fillets
- 2 tbsp olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tsp dried oregano
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 cup cherry tomatoes
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, lemon juice, lemon zest, oregano, garlic, salt, and pepper.
- Place the salmon fillets in a baking dish and pour the mixture over the top.
- Scatter the cherry tomatoes around the salmon.
- Bake for 12-15 minutes or until the salmon is cooked through and flakes easily.
- Serve warm.
Notes
For added spice, include red pepper flakes in the olive oil mixture. Fresh herbs can substitute dried herbs for a more vibrant flavor.
