Ingredients

  • 2 boneless, skinless chicken breasts (halved into cutlets)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko preferred)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 23 tbsp olive oil (for pan-frying)
  • 2 cups mashed potatoes
  • 1 cup brown gravy (store-bought or homemade)
  • 1 cup diced carrots
  • 1 cup green peas
  • 1 tbsp butter

Instructions

  1. Mix the Parmesan cheese, breadcrumbs, garlic powder, and Italian seasoning in a shallow bowl. Season the chicken with salt and pepper.
  2. Dip the chicken cutlets into the beaten egg, then press them into the breadcrumb-Parmesan mix to coat well.
  3. Heat the olive oil in a skillet over medium heat. Cook the chicken for 3–4 minutes on each side, or until golden and cooked through.
  4. Warm the mashed potatoes in a pot and top them with hot brown gravy.
  5. Steam the peas and carrots together until tender. Toss them with butter and a pinch of salt.
  6. Plate the crispy chicken with a generous scoop of mashed potatoes and veggies. Enjoy!

Notes

For extra crunch, use panko breadcrumbs and ensure the oil is hot before adding the chicken. Marinating the chicken in Italian dressing beforehand can enhance flavor.
