A delicious and easy meal combining chicken, cheese, and marinara sauce, perfect for busy weeknights.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 6 oz spaghetti
  • Salt, pepper & chopped parsley (for garnish)
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C). Pound the chicken to an even thickness.
  2. Dredge each piece of chicken in the flour, dip it in the beaten eggs, and coat with the mix of breadcrumbs and Parmesan cheese.
  3. Place the coated chicken on a baking sheet, spray lightly with olive oil, and bake for 20–25 minutes, or until golden brown.
  4. Spoon marinara sauce over the chicken and sprinkle mozzarella cheese on top. Return to the oven for about 5 minutes until the cheese is melted.
  5. While the chicken bakes, cook the spaghetti according to the package instructions and drain when done.
  6. Serve the chicken over the spaghetti, add extra marinara sauce if desired, and sprinkle with chopped parsley for garnish.

Notes

Ensure the chicken is pounded to an even thickness for uniform cooking. Store leftovers in an airtight container for up to 3 days.
