Delicious and convenient muffins inspired by the classic quiche, filled with eggs, cream, cheese, and ham.

- 1 sheet of shortcrust pastry
- 1 onion, finely chopped
- 100g ham, diced
- 100g Emmental cheese, grated
- 3 large eggs
- 200ml cream
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 180°C (350°F).
- Roll out the shortcrust pastry and cut it into circles to fit a muffin tin. Press the pastry into the muffin tin cups.
- In a skillet, sauté the chopped onion until translucent. Add the diced ham and cook for another 2 minutes.
- In a bowl, whisk together the eggs and cream, then season with salt and pepper.
- Distribute the onion and ham mixture evenly into the pastry-lined muffin cups.
- Pour the egg mixture over the fillings, filling each cup about 3/4 full.
- Sprinkle the grated Emmental cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the muffins are set and golden brown.
- Let them cool slightly before serving. Enjoy!
Notes
These muffins can be served warm or at room temperature. Store in an airtight container for 2-3 days in the fridge, or freeze for longer storage.
