Quiche Lorraine Muffins

Description

Delicious and convenient muffins inspired by the classic quiche, filled with eggs, cream, cheese, and ham.


Ingredients

  • 1 sheet of shortcrust pastry
  • 1 onion, finely chopped
  • 100g ham, diced
  • 100g Emmental cheese, grated
  • 3 large eggs
  • 200ml cream
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and cut it into circles to fit a muffin tin. Press the pastry into the muffin tin cups.
  3. In a skillet, sauté the chopped onion until translucent. Add the diced ham and cook for another 2 minutes.
  4. In a bowl, whisk together the eggs and cream, then season with salt and pepper.
  5. Distribute the onion and ham mixture evenly into the pastry-lined muffin cups.
  6. Pour the egg mixture over the fillings, filling each cup about 3/4 full.
  7. Sprinkle the grated Emmental cheese on top.
  8. Bake in the preheated oven for 25-30 minutes or until the muffins are set and golden brown.
  9. Let them cool slightly before serving. Enjoy!

Notes

These muffins can be served warm or at room temperature. Store in an airtight container for 2-3 days in the fridge, or freeze for longer storage.
