Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp cocoa powder
  • 1 cup unsalted butter, softened
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice or vinegar)
  • 3 large eggs
  • 2 tbsp purple food coloring (gel or liquid)
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together buttermilk, eggs, purple food coloring, vanilla extract, and white vinegar.
  4. In a mixer, beat the softened butter and sugar together until light and fluffy.
  5. Alternately add dry and wet ingredients to the butter mixture, mixing until just combined.
  6. Divide the batter between the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  7. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat softened cream cheese and butter until smooth, then gradually add powdered sugar, stir in vanilla extract, and add a pinch of salt.
  9. Once cakes are cool, frost between layers and over the top and sides of the cake.
  10. Optionally, decorate with edible flowers, purple sprinkles, or glitter before serving.

Notes

For a chocolate twist, consider adding chocolate chips or using a chocolate frosting.
