- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp cocoa powder
- 1 cup unsalted butter, softened
- 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice or vinegar)
- 3 large eggs
- 2 tbsp purple food coloring (gel or liquid)
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans.
- In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, whisk together buttermilk, eggs, purple food coloring, vanilla extract, and white vinegar.
- In a mixer, beat the softened butter and sugar together until light and fluffy.
- Alternately add dry and wet ingredients to the butter mixture, mixing until just combined.
- Divide the batter between the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat softened cream cheese and butter until smooth, then gradually add powdered sugar, stir in vanilla extract, and add a pinch of salt.
- Once cakes are cool, frost between layers and over the top and sides of the cake.
- Optionally, decorate with edible flowers, purple sprinkles, or glitter before serving.
Notes
For a chocolate twist, consider adding chocolate chips or using a chocolate frosting.
