- 1 1/2 cups sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda

- 1 cup vegetable oil
- 2 large eggs

- 1 cup buttermilk
- Purple food coloring (gel or liquid)
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the vegetable oil, eggs, vinegar, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, alternating with the buttermilk, and mix until smooth.
- Add purple food coloring until the desired shade is reached, mixing until evenly incorporated.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- In a large mixing bowl, beat together the cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Stir in the vanilla extract until well combined.
- Once the cakes are completely cooled, frost the top of one cake layer with a generous amount of cream cheese frosting.
- Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
- Slice, serve, and enjoy!
Notes
Use gel food coloring for a richer purple color. Make sure all your ingredients are at room temperature for a smoother batter.
