- 2 1/2 cups (310g) all-purpose flour
- 2 tbsp cornstarch
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tbsp cocoa powder
- 1 cup (240ml) vegetable oil
- 1 1/2 cups (300g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp purple food coloring (gel preferred)
- 1 cup (240ml) buttermilk
- 1 tsp white vinegar
- 16 oz (450g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 4 cups (500g) powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and cocoa powder.
- In a large bowl, mix sugar and oil until smooth. Add eggs one by one, followed by vanilla extract and purple food coloring.
- In another bowl, combine buttermilk and vinegar.
- Gradually add dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with dry. Mix until just combined.
- Divide batter into prepared cake pans and bake for 30-35 minutes.
- Allow cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
- For frosting, beat cream cheese and butter until smooth, add powdered sugar gradually, then stir in vanilla and salt. Adjust consistency with milk if needed.
- Assemble the cake by placing one layer on a serving plate, frosting the top, adding the second layer, and frosting the entire cake.
- Decorate with remaining frosting or garnishes.

Make sure all ingredients are at room temperature. Do not overmix the batter.
