Description

A colorful and delightful dessert that adds a fun twist to the classic red velvet cake, perfect for celebrations or a sweet treat at home.


Ingredients

  • 2 1/2 cups (310g) all-purpose flour
  • 2 tbsp cornstarch
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tbsp cocoa powder
  • 1 cup (240ml) vegetable oil
  • 1 1/2 cups (300g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp purple food coloring (gel preferred)
  • 1 cup (240ml) buttermilk
  • 1 tsp white vinegar
  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (500g) powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and cocoa powder.
  3. In a large bowl, mix sugar and oil until smooth. Add eggs one by one, followed by vanilla extract and purple food coloring.
  4. In another bowl, combine buttermilk and vinegar.
  5. Gradually add dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with dry. Mix until just combined.
  6. Divide batter into prepared cake pans and bake for 30-35 minutes.
  7. Allow cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
  8. For frosting, beat cream cheese and butter until smooth, add powdered sugar gradually, then stir in vanilla and salt. Adjust consistency with milk if needed.
  9. Assemble the cake by placing one layer on a serving plate, frosting the top, adding the second layer, and frosting the entire cake.
  10. Decorate with remaining frosting or garnishes.
  11. Slice and enjoy!

Notes

Make sure all ingredients are at room temperature. Do not overmix the batter.
