Pumpkin Spice Latte Cake

Description

A delightful cake combining warm pumpkin spice and rich coffee flavors, perfect for fall gatherings.


Ingredients

  • 400 g unsalted butter
  • 400 g light brown sugar
  • 400 g self-raising flour
  • 8 medium eggs
  • 2 tsp pumpkin spice mix
  • 2 tbsp instant coffee
  • 350 g unsalted butter (for frosting)
  • 700 g icing sugar
  • 2 tsp pumpkin spice mix (for frosting)
  • 1 tsp vanilla extract
  • 75 g dark chocolate (for decoration)
  • 75 g milk chocolate (for decoration)
  • 150 ml double cream (for decoration)
  • Halloween sprinkles (for decoration)
  • Halloween marshmallows (for decoration)

Instructions

  1. Preheat the oven to 180C/160C fan and line three 20cm/8inch cake tins with baking parchment.
  2. In a stand mixer, beat together the unsalted butter and light brown sugar until light and fluffy.
  3. Dissolve the instant coffee in 2 tablespoons of boiling water.
  4. Add the self-raising flour, pumpkin spice mix, eggs, and dissolved coffee to the mixture and mix briefly until combined.
  5. Divide the batter evenly between the tins and bake for 25-30 minutes or until a skewer comes out clean.
  6. Allow the cake to cool in the tins for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the remaining unsalted butter until soft. Add the pumpkin spice mix and vanilla, then gradually mix in the icing sugar.
  8. If the frosting is too stiff, add a little boiling water until it reaches a pipeable consistency.
  9. Layer the cake with frosting between each layer.
  10. Smooth a thin layer of frosting around the outside of the cake, refrigerate for 20 minutes, then add a thicker layer of frosting.
  11. Melt the dark chocolate, milk chocolate, and cream together until smooth; then pour over the cake.
  12. Decorate the cake with piped buttercream, sprinkles, and marshmallows.

Notes

Store it in an airtight container at room temperature for up to three days, or refrigerate for up to a week.
