Ingredients

  • 1/2 teaspoon vanilla extract
  • 1/4 cup crushed gingersnap cookies (optional)

Instructions

  1. In a mixing bowl, whisk together the pumpkin puree, granulated sugar, cinnamon, ginger, and vanilla extract until smooth.
  2. Gently fold in the whipped heavy cream to create a light and fluffy mousse consistency.
  3. In a separate bowl, mix the chopped pecans, sliced almonds, and crushed gingersnap cookies (if using).
  4. In serving glasses, start with a layer of pumpkin mousse, followed by a sprinkle of the crunchy nut mixture.
  5. Repeat layers of pumpkin mousse and nut crunch.
  6. Garnish with a sprinkle of cinnamon or a few whole nuts.
