Instructions
- In a mixing bowl, whisk together the pumpkin puree, granulated sugar, cinnamon, ginger, and vanilla extract until smooth.
- Gently fold in the whipped heavy cream to create a light and fluffy mousse consistency.
- In a separate bowl, mix the chopped pecans, sliced almonds, and crushed gingersnap cookies (if using).
- In serving glasses, start with a layer of pumpkin mousse, followed by a sprinkle of the crunchy nut mixture.
- Repeat layers of pumpkin mousse and nut crunch.
- Garnish with a sprinkle of cinnamon or a few whole nuts.
- Refrigerate for at least 30 minutes before serving.
