Ingredients

  • 1 2/3 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree (canned, not pumpkin pie mix)
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin (about 2 1/2 teaspoons)
  • 1/4 cup water
  • Whipped cream (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Line a 9×13 inch baking dish with foil and spray with non-stick spray.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the baking dish.
  3. Beat cream cheese until smooth. Add sour cream and sugar; mix well. Add eggs one at a time, mixing well. Stir in vanilla.
  4. Spread the cream cheese mixture over the crust. Bake for 30–35 minutes until just set. Cool completely.
  5. In a saucepan, combine pumpkin puree, eggs, brown sugar, granulated sugar, milk, pumpkin spice, and cinnamon. Cook for 10 minutes.
  6. In another saucepan, soften gelatin in water. Melt over low heat, then add to pumpkin mixture.
  7. Pour the pumpkin mixture over the cooled cream cheese layer. Refrigerate for several hours or overnight.
  8. Cut into bars and serve with whipped cream if desired.

Notes

Ensure cream cheese is softened for easy mixing. You can add chocolate chips or nuts for an extra crunch.
