- 1 2/3 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree (canned, not pumpkin pie mix)
- 1/2 cup milk
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 envelope unflavored gelatin (about 2 1/2 teaspoons)
- 1/4 cup water
- Whipped cream (optional)
Instructions
- Preheat the oven to 325°F (163°C). Line a 9×13 inch baking dish with foil and spray with non-stick spray.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the baking dish.
- Beat cream cheese until smooth. Add sour cream and sugar; mix well. Add eggs one at a time, mixing well. Stir in vanilla.
- Spread the cream cheese mixture over the crust. Bake for 30–35 minutes until just set. Cool completely.
- In a saucepan, combine pumpkin puree, eggs, brown sugar, granulated sugar, milk, pumpkin spice, and cinnamon. Cook for 10 minutes.
- In another saucepan, soften gelatin in water. Melt over low heat, then add to pumpkin mixture.
- Pour the pumpkin mixture over the cooled cream cheese layer. Refrigerate for several hours or overnight.
- Cut into bars and serve with whipped cream if desired.
Notes
Ensure cream cheese is softened for easy mixing. You can add chocolate chips or nuts for an extra crunch.
