  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup sour cream

  • 1 cup pumpkin puree (canned, not pumpkin pie mix)
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin
  • 1/4 cup water
  • Whipped cream (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a 9×13-inch baking dish with foil, lightly spraying it with non-stick spray.
  2. In a medium bowl, mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until moist, then press the mixture into the bottom of the prepared baking dish.
  3. Beat the cream cheese in a mixing bowl until smooth, then add sour cream and sugar, mixing until well combined. Add eggs one at a time and stir in vanilla. Spoon cheesecake mixture over the crust and spread evenly. Bake for 30-35 minutes until the center is just set, then cool completely.
  4. In a medium saucepan over medium-low heat, combine pumpkin puree, 2 eggs, milk, brown sugar, granulated sugar, pumpkin pie spice, and cinnamon. Cook for 10 minutes, stirring frequently. Remove from heat and stir in vanilla.
  5. In a small saucepan, sprinkle gelatin over water and let soften for 5 minutes. Heat gently on low until dissolved, then mix into the pumpkin mixture until smooth.
  6. Pour the pumpkin mixture over the cooled cheesecake layer and refrigerate for several hours or overnight until set.
  7. Cut into bars and top with whipped cream if desired.

Notes

Make sure to soften the cream cheese for a smooth filling. You can add chopped nuts or chocolate chips to the crust for extra flavor.
