- 1 2/3 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1/4 cup sour cream

- 1 cup pumpkin puree (canned, not pumpkin pie mix)
- 1/2 cup milk
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 envelope unflavored gelatin
- 1/4 cup water
- Whipped cream (optional)
Instructions
- Preheat the oven to 325°F (163°C) and line a 9×13-inch baking dish with foil, lightly spraying it with non-stick spray.
- In a medium bowl, mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until moist, then press the mixture into the bottom of the prepared baking dish.
- Beat the cream cheese in a mixing bowl until smooth, then add sour cream and sugar, mixing until well combined. Add eggs one at a time and stir in vanilla. Spoon cheesecake mixture over the crust and spread evenly. Bake for 30-35 minutes until the center is just set, then cool completely.
- In a medium saucepan over medium-low heat, combine pumpkin puree, 2 eggs, milk, brown sugar, granulated sugar, pumpkin pie spice, and cinnamon. Cook for 10 minutes, stirring frequently. Remove from heat and stir in vanilla.
- In a small saucepan, sprinkle gelatin over water and let soften for 5 minutes. Heat gently on low until dissolved, then mix into the pumpkin mixture until smooth.
- Pour the pumpkin mixture over the cooled cheesecake layer and refrigerate for several hours or overnight until set.
- Cut into bars and top with whipped cream if desired.
Notes
Make sure to soften the cream cheese for a smooth filling. You can add chopped nuts or chocolate chips to the crust for extra flavor.
