Ingredients

  • 16 oz pumpkin puree
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, beat the eggs, pumpkin puree, sugar, and oil until smooth and well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool completely in the pan on a wire rack.
  8. In a medium bowl, beat the cream cheese and butter until light and fluffy.
  9. Add powdered sugar and vanilla extract, beating until smooth and creamy.
  10. Once the bars are cool, spread frosting evenly over the top.
  11. Cut into squares and serve. Refrigerate leftovers.

Notes

For best results, use pure pumpkin puree, and let the bars cool completely before frosting.
