- 4 large eggs
- 16 oz pumpkin puree
- 1 1/2 cups granulated sugar
- 1 cup vegetable oil
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, beat the eggs, pumpkin puree, sugar, and oil until smooth and well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan on a wire rack.
- In a medium bowl, beat the cream cheese and butter until light and fluffy.
- Add powdered sugar and vanilla extract, beating until smooth and creamy.
- Once the bars are cool, spread frosting evenly over the top.
- Cut into squares and serve. Refrigerate leftovers.
Notes
For best results, use pure pumpkin puree, and let the bars cool completely before frosting.
