Ingredients

- 2 soft-boiled eggs
- 1/2 ripe avocado, sliced
- 1 cup steamed or sautéed broccoli florets
- 1/2 cup sautéed mushrooms
- 1/2 tsp sesame seeds (black & white mix)
- Salt and pepper to taste
- Optional: a drizzle of sesame oil or soy sauce
Instructions
- Boil the eggs for 6-7 minutes, then transfer them to ice water to achieve perfectly jammy yolks.
- In a hot pan, add a dash of olive oil and sauté the mushrooms until golden brown.
- Steam broccoli until bright green, or char it in a dry pan for extra texture.
- Slice the avocado into thin slices and fan them out on the plate.
- Arrange everything on a plate, sprinkle with sesame seeds, salt, and pepper, and drizzle with sesame oil or soy sauce.
Notes
Store leftovers in an airtight container in the fridge and consume within 1-2 days. Keep eggs and avocado separate for best freshness.
