Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 cup wheat flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut
  • 1 cup dark chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, beat the eggs and sugar until light and fluffy.
  3. Gradually add the flour and baking powder, mixing until combined.
  4. Stir in the milk and vegetable oil until smooth.
  5. Pour half of the batter into the prepared pan.
  6. Layer with shredded coconut, then top with the remaining batter.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Once cooled, melt the dark chocolate and pour it over the cake to create a ganache.
  9. Serve chilled for the best flavor.

Notes

Serve with vanilla ice cream or whipped cream. Top with extra shredded coconut for decoration.
