Ingredients

- 2–3 eggs
- 1 tbsp chopped green onions
- 1/2 cup fresh spinach
- 1/2 cup cherry tomatoes, halved
- 1/2 cup mushrooms, sliced
- 1 tsp olive oil
- Salt & black pepper to taste
Instructions
- Whisk eggs with a pinch of salt and scramble them on low heat until fluffy, then top with chopped green onions.
- In a pan with a drizzle of olive oil, sauté the spinach until wilted.
- Sauté the sliced mushrooms in olive oil until golden and tender.
- Slice the cherry tomatoes in half and serve them fresh.
- Plate each element neatly for a balanced breakfast.
Notes
You can add cheese on top of the eggs for extra flavor. Use any veggies you have on hand; bell peppers and zucchini work great too!
