Ingredients

- 2 large eggs
- 1/2 cup fresh spinach
- 1/2 avocado, sliced
- 5–6 cherry tomatoes, halved
- 1 tsp olive oil or butter
- Salt & black pepper to taste
- Everything bagel seasoning or chili flakes (optional)
Instructions
- Heat olive oil or butter in a non-stick pan. Add eggs and scramble gently until fluffy.
- Just before the eggs finish cooking, add spinach and stir until wilted.
- Transfer eggs and spinach to a bowl and top with cherry tomatoes.
- Slice avocado and fan it over the bowl, sprinkling with optional seasoning.
- Season with salt and black pepper to taste and enjoy.
