Description

A creamy and flavorful potato salad that is perfect for gatherings, picnics, and barbecues.


Ingredients

  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/4 cup chopped pickles or pickle relish
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes in salted water until fork-tender, then drain and cool.
  2. Once cooled, peel and chop the potatoes into cubes.
  3. In a large bowl, combine mayonnaise, mustard, onion, celery, pickles, salt, and pepper.
  4. Add the diced potatoes and mix gently until coated.
  5. Cover and refrigerate for at least 120 minutes, or preferably overnight, to allow flavors to meld.
  6. Serve chilled, garnished with paprika.

Notes

For a healthier version, substitute Greek yogurt for mayonnaise. Adjust seasoning to your taste.
