Ingredients

- 2 pounds potatoes
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/4 cup chopped pickles or pickle relish
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Boil the potatoes in salted water until fork-tender, then drain and cool.
- Once cooled, peel and chop the potatoes into cubes.
- In a large bowl, combine mayonnaise, mustard, onion, celery, pickles, salt, and pepper.
- Add the diced potatoes and mix gently until coated.
- Cover and refrigerate for at least 120 minutes, or preferably overnight, to allow flavors to meld.
- Serve chilled, garnished with paprika.
Notes
For a healthier version, substitute Greek yogurt for mayonnaise. Adjust seasoning to your taste.
