- 1 Chuck roast (around 3–4 lbs)
- 4 cups beef broth
- 1 onion, chopped
- 4 carrots, chopped
- 4 potatoes, peeled and cut into chunks
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Pickled beets for serving
Instructions
- Preheat your oven to 300°F (150°C).
- Season the chuck roast with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat.
- Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
- In the same pot, add chopped onion and carrots. Cook until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute.
- Place the chuck roast back into the pot and add beef broth. Bring to a simmer.
- Cover and transfer to the preheated oven. Cook for about 3-4 hours, or until the meat is tender and falls apart easily.
- For the garlic mashed potatoes, boil the potatoes in salted water until tender.
- Drain and mash with garlic, butter, and additional seasoning.
- Serve the pot roast with garlic mashed potatoes and pickled beets on the side.
Notes
For creamier mashed potatoes, add butter and cream. You can cook the pot roast a day in advance for richer flavor.
