Description

A classic comfort food combining tender beef with creamy mashed potatoes and tangy pickled beets, perfect for family gatherings.


Ingredients

  • 1 Chuck roast (around 34 lbs)
  • 4 cups beef broth
  • 1 onion, chopped
  • 4 carrots, chopped
  • 4 potatoes, peeled and cut into chunks
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Pickled beets for serving

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat.
  3. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
  4. In the same pot, add chopped onion and carrots. Cook until softened, about 5-7 minutes.
  5. Add minced garlic and cook for another minute.
  6. Place the chuck roast back into the pot and add beef broth. Bring to a simmer.
  7. Cover and transfer to the preheated oven. Cook for about 3-4 hours, or until the meat is tender and falls apart easily.
  8. For the garlic mashed potatoes, boil the potatoes in salted water until tender.
  9. Drain and mash with garlic, butter, and additional seasoning.
  10. Serve the pot roast with garlic mashed potatoes and pickled beets on the side.

Notes

For creamier mashed potatoes, add butter and cream. You can cook the pot roast a day in advance for richer flavor.
