- 4 salmon fillets
- 1 cup pomegranate juice
- 1 orange, juiced and zested
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Pomegranate seeds and orange slices for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan, combine pomegranate juice, orange juice, orange zest, honey, soy sauce, and olive oil. Bring to a simmer and reduce for about 5-7 minutes until thickened.
- Season salmon fillets with salt and pepper. Place on a baking sheet lined with parchment paper.
- Brush the glaze over the salmon fillets.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
- Remove from the oven, drizzle with remaining glaze, and garnish with pomegranate seeds and orange slices. Serve warm and enjoy!
Notes
For the best flavor, use fresh pomegranate juice. Be careful not to overcook the salmon; it should be moist. Adding chili flakes can give a little heat.
