Description

A delightful twist on the classic Italian dessert, combining rich pistachio flavors with creamy, coffee-infused layers of tiramisu.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1 teaspoon baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1 cup brewed coffee (cooled)
  • 2 tablespoons coffee liqueur (optional)
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with parchment paper.
  2. In a large mixing bowl, combine the eggs and sugar until light and fluffy, roughly for about 5 minutes.
  3. Melt the butter and let it cool slightly, then mix it into the egg mixture along with the vanilla extract.
  4. In another bowl, mix the flour, ground pistachios, and baking powder together until well combined.
  5. Carefully combine the dry ingredients with the wet mixture until just combined, being careful not to overmix.
  6. Pour the combined batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, let the sponge cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  8. While the cake is cooling, whip the heavy cream until stiff peaks form, then gently fold in the mascarpone cheese.
  9. In a shallow dish, combine the brewed coffee and coffee liqueur, if using. Dip the cooled sponge cake in the coffee mixture to soak it.
  10. Layer the soaked cake in a serving dish and add a layer of the mascarpone mixture on top. Repeat the process until all cake and cream are used, finishing with the mascarpone on top.
  11. Refrigerate for at least 4 hours or overnight to allow the flavors to meld and the dessert to set properly.
  12. Before serving, sprinkle cocoa powder over the top for a finishing touch.

Notes

Store leftovers in the refrigerator. It should stay fresh for up to three days, but is best enjoyed within the first couple of days.
