A delightful twist on the classic Italian dessert, combining rich pistachio flavors with creamy, coffee-infused layers of tiramisu.

- 1 cup all-purpose flour
- 1/2 cup ground pistachios
- 1 teaspoon baking powder
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1 cup brewed coffee (cooled)
- 2 tablespoons coffee liqueur (optional)
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with parchment paper.
- In a large mixing bowl, combine the eggs and sugar until light and fluffy, roughly for about 5 minutes.
- Melt the butter and let it cool slightly, then mix it into the egg mixture along with the vanilla extract.
- In another bowl, mix the flour, ground pistachios, and baking powder together until well combined.
- Carefully combine the dry ingredients with the wet mixture until just combined, being careful not to overmix.
- Pour the combined batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let the sponge cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- While the cake is cooling, whip the heavy cream until stiff peaks form, then gently fold in the mascarpone cheese.
- In a shallow dish, combine the brewed coffee and coffee liqueur, if using. Dip the cooled sponge cake in the coffee mixture to soak it.
- Layer the soaked cake in a serving dish and add a layer of the mascarpone mixture on top. Repeat the process until all cake and cream are used, finishing with the mascarpone on top.
- Refrigerate for at least 4 hours or overnight to allow the flavors to meld and the dessert to set properly.
- Before serving, sprinkle cocoa powder over the top for a finishing touch.
Notes
Store leftovers in the refrigerator. It should stay fresh for up to three days, but is best enjoyed within the first couple of days.
