- 1 cup unsalted butter, softened
- 1 cup powdered sugar plus more for dusting
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup pistachios, finely chopped
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add in the vanilla extract and stir the mixture.
- Gently fold in the all-purpose flour, salt, and finely chopped pistachios, mixing until just incorporated.
- Roll the mixture into small bite-sized spheres and place them on an ungreased baking sheet, leaving space between each ball.
- Transfer the baking sheet to the preheated oven and bake for about 15-20 minutes until they are lightly golden.
- Once baked, allow them to sit and cool on the tray for a short period.
- While still warm, coat each cookie generously in powdered sugar before transferring them.
- Allow them to cool fully on a wire rack before enjoying.
Notes
For extra flavor, try toasting the pistachios slightly before chopping them. You can substitute some all-purpose flour with almond flour for a nuttier taste.
