  • 2 cups all-purpose flour
  • 1 cup pistachios, finely chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add in the vanilla extract and stir the mixture.
  4. Gently fold in the all-purpose flour, salt, and finely chopped pistachios, mixing until just incorporated.
  5. Roll the mixture into small bite-sized spheres and place them on an ungreased baking sheet, leaving space between each ball.
  6. Transfer the baking sheet to the preheated oven and bake for about 15-20 minutes until they are lightly golden.
  7. Once baked, allow them to sit and cool on the tray for a short period.
  8. While still warm, coat each cookie generously in powdered sugar before transferring them.
  9. Allow them to cool fully on a wire rack before enjoying.

Notes

For extra flavor, try toasting the pistachios slightly before chopping them. You can substitute some all-purpose flour with almond flour for a nuttier taste.
