Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 large eggs

  • 1/2 cup plain Greek yogurt
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1 cup shelled pistachios, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, cream the softened butter until fluffy. Then, beat in the eggs one at a time.
  4. Add the vanilla extract, Greek yogurt, lemon zest, and lemon juice to the butter mixture, mixing until well combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  6. Gently fold in the chopped pistachios.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
