- 2 teaspoons baking powder

- 1 1/2 cups granulated sugar
- 4 large eggs

- 1 cup pink dragon fruit puree
- 1/2 cup whole milk
- Pink food coloring (optional)
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- Fresh slices of dragon fruit (for garnish)
- Edible flowers (optional)
- Shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Mix in pink dragon fruit puree and optional food coloring until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
- Divide the batter evenly between the prepared cake pans and bake for 20-25 minutes, or until a toothpick comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Optionally tint half with pink food coloring.
- Assemble the cake with layers of frosting in between. Garnish with fresh slices of dragon fruit, edible flowers, and shredded coconut if desired.
- Serve and enjoy!
