Ingredients

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh slices of dragon fruit (for garnish)
  • Edible flowers (optional)
  • Shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Mix in pink dragon fruit puree and optional food coloring until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
  6. Divide the batter evenly between the prepared cake pans and bake for 20-25 minutes, or until a toothpick comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Optionally tint half with pink food coloring.
  8. Assemble the cake with layers of frosting in between. Garnish with fresh slices of dragon fruit, edible flowers, and shredded coconut if desired.
