Instructions
- Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla extract.
- Mix in pink dragon fruit puree. Optional: add pink food coloring for vibrant color.
- Gradually add dry ingredients alternately with milk until just combined.
- Divide batter among the prepared pans and bake for 20-25 minutes or until a toothpick comes out clean. Let cakes cool for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat heavy whipping cream, powdered sugar, and vanilla until soft peaks form. Divide frosting and tint half pink if desired.
- Assemble layers with frosting in between. Garnish with fresh dragon fruit slices, edible flowers, and shredded coconut.
