Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  4. Mix in pink dragon fruit puree. Optional: add pink food coloring for vibrant color.
  5. Gradually add dry ingredients alternately with milk until just combined.
  6. Divide batter among the prepared pans and bake for 20-25 minutes or until a toothpick comes out clean. Let cakes cool for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat heavy whipping cream, powdered sugar, and vanilla until soft peaks form. Divide frosting and tint half pink if desired.
  8. Assemble layers with frosting in between. Garnish with fresh dragon fruit slices, edible flowers, and shredded coconut.
