- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 can (8 oz) crushed pineapple, drained
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the almond extract.
- Combine the flour and baking powder in a separate bowl, then gradually add it to the creamed mixture and mix well.
- Spread half of the dough into a rectangle on a sheet of wax paper.
- In another bowl, mix the drained crushed pineapple, cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread half of the pineapple mixture over the dough.
- Roll the dough tightly using the wax paper, then refrigerate for at least 2 hours.
- Slice the rolled dough into pinwheels and place them on a baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Let cool on a wire rack before serving.
