Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 can (8 oz) crushed pineapple, drained
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the almond extract.
  4. Combine the flour and baking powder in a separate bowl, then gradually add it to the creamed mixture and mix well.
  5. Spread half of the dough into a rectangle on a sheet of wax paper.
  6. In another bowl, mix the drained crushed pineapple, cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Spread half of the pineapple mixture over the dough.
  8. Roll the dough tightly using the wax paper, then refrigerate for at least 2 hours.
  9. Slice the rolled dough into pinwheels and place them on a baking sheet.
  10. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  11. Let cool on a wire rack before serving.
