Description

A moist and fruity cake flavored with pineapple juice and optionally enhanced with chopped walnuts. Perfect for any occasion!


Ingredients

  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup pineapple juice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or bundt pan.
  2. In a large mixing bowl, combine sugar and vegetable oil and beat until well blended and fluffy.
  3. Add eggs, one at a time, mixing thoroughly after each addition.
  4. Stir in pineapple juice and vanilla extract until combined.
  5. In a separate bowl, mix flour, baking soda, and salt, then gradually add to the wet ingredients, stirring gently.
  6. Fold in chopped walnuts if using.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Serve plain or with powdered sugar on top.

Notes

Store leftover cake in an airtight container for up to three days or refrigerate for a week. Can be frozen for up to three months.
