Ingredients

- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup pineapple juice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or bundt pan.
- In a large mixing bowl, combine sugar and vegetable oil and beat until well blended and fluffy.
- Add eggs, one at a time, mixing thoroughly after each addition.
- Stir in pineapple juice and vanilla extract until combined.
- In a separate bowl, mix flour, baking soda, and salt, then gradually add to the wet ingredients, stirring gently.
- Fold in chopped walnuts if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30 to 35 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Serve plain or with powdered sugar on top.
Notes
Store leftover cake in an airtight container for up to three days or refrigerate for a week. Can be frozen for up to three months.
