Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (20 oz) crushed pineapple, drained
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 tbsp lemon juice
  • 1/2 cup whipped cream
  • Pineapple chunks or slices for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it forms a sandy texture.
  3. Press the mixture into the bottom of a 9-inch pie dish and bake for 8-10 minutes until lightly golden, then set aside to cool.
  4. In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and lemon juice, mixing well.
  5. Gently fold in the drained crushed pineapple until evenly mixed.
  6. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the pineapple mixture until smooth and fluffy.
  7. Spoon the filling into the cooled crust and refrigerate for at least 4 hours or overnight.
  8. Before serving, top with whipped cream and garnish with fresh pineapple chunks if desired.

Notes

Make sure to drain the crushed pineapple well to avoid a watery filling. For a firmer pie, let it chill overnight.
