- 1 box yellow cake mix
- 1 cup pineapple chunks (canned, drained)
- 1 cup whipped cream
- 1/2 cup shredded coconut
- 1/2 cup pineapple juice (from the can)
- 2 eggs
- 1/3 cup vegetable oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine cake mix, eggs, vegetable oil, and pineapple juice. Mix until smooth.
- Pour the batter into a greased 9×9 inch baking pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let it cool completely.
- Spread whipped cream evenly over the cooled cake.
- Top with pineapple chunks and sprinkle shredded coconut over the top.
- Refrigerate for at least 1 hour before serving.
Notes
