Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice (reserved if using canned pineapple)
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 2 cups cooked white or brown rice
  • 2 green onions, chopped (for garnish)

Instructions

  1. Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  2. In the same skillet, add pineapple chunks, pineapple juice, soy sauce, honey, rice vinegar, garlic, and ginger. Stir and bring to a simmer.
  3. Add the cornstarch slurry to the skillet and stir well, cooking for 1-2 minutes until the sauce thickens.
  4. Return the chicken to the skillet, spoon the sauce over top, cover, and simmer on low heat for 10-12 minutes until the chicken is fully cooked (internal temperature of 165°F/74°C).
  5. Plate the chicken over a bed of cooked rice, topping with pineapple chunks and sauce. Garnish with chopped green onions.
