- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 tbsp olive oil
- Salt and freshly ground black pepper to taste
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup pineapple juice (reserved if using canned pineapple)
- 1/4 cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tsp cornstarch mixed with 2 tbsp water
- 2 cups cooked white or brown rice
- 2 green onions, chopped (for garnish)
Instructions
- Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add pineapple chunks, pineapple juice, soy sauce, honey, rice vinegar, garlic, and ginger. Stir and bring to a simmer.
- Add the cornstarch slurry to the skillet and stir well, cooking for 1-2 minutes until the sauce thickens.
- Return the chicken to the skillet, spoon the sauce over top, cover, and simmer on low heat for 10-12 minutes until the chicken is fully cooked (internal temperature of 165°F/74°C).
- Plate the chicken over a bed of cooked rice, topping with pineapple chunks and sauce. Garnish with chopped green onions.
