Description

A delightful dessert combining the sweetness of pineapple with a soft, fluffy cake and creamy frosting.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 can (20 oz) crushed pineapple in juice
  • 1 cup chopped nuts (optional)
  • 1/2 cup unsalted butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar
  • Coconut flakes for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple (juice included). Mix until well blended.
  3. Pour the batter into the prepared baking dish and bake for 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
  4. While the cake bakes, beat together butter, cream cheese, and vanilla extract until smooth. Gradually add confectioners’ sugar until creamy.
  5. Once the cake is slightly cooled, spread cream cheese frosting evenly over the top. Garnish with chopped nuts and coconut flakes, if desired.
  6. Let cool completely before cutting and serving.

Notes

For a thicker cake, drain the crushed pineapple. Let cream cheese frosting soften at room temperature for easier spreading.
