- 2 cups all-purpose flour
- 2 cups sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 can (20 oz) crushed pineapple in juice
- 1 cup chopped nuts (optional)
- 1/2 cup unsalted butter, softened
- 1 package (8 oz) cream cheese, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups confectioners’ sugar
- Coconut flakes for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple (juice included). Mix until well blended.
- Pour the batter into the prepared baking dish and bake for 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
- While the cake bakes, beat together butter, cream cheese, and vanilla extract until smooth. Gradually add confectioners’ sugar until creamy.
- Once the cake is slightly cooled, spread cream cheese frosting evenly over the top. Garnish with chopped nuts and coconut flakes, if desired.
- Let cool completely before cutting and serving.
Notes
For a thicker cake, drain the crushed pineapple. Let cream cheese frosting soften at room temperature for easier spreading.
