- 1 cup crushed pineapple (drained)
- 1/2 cup coconut milk
- 1/2 cup vegetable oil

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, combine the crushed pineapple, coconut milk, vegetable oil, sugar, eggs, and vanilla extract. Mix until well blended.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined. Fold in the shredded coconut if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and coconut milk until you achieve a smooth consistency. Stir in the vanilla extract.
- Once the cake is cool, frost it with the coconut frosting. You can garnish with additional shredded coconut if desired.
Notes
For added crunch, consider adding chopped walnuts or pecans to the batter. Use room temperature ingredients for the best texture.
