Ingredients

- 4 cups shredded green cabbage
- 1 green bell pepper, chopped
- 2 medium tomatoes, chopped
- 1/2 small onion, finely diced
- 2 tbsp chopped fresh parsley
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
- 1 tbsp sugar (or honey)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp celery seed (optional)
Instructions
- In a large bowl, combine the shredded cabbage, chopped bell pepper, chopped tomatoes, finely diced onion, and chopped parsley.
- In a small bowl, whisk together the apple cider vinegar, olive oil, sugar (or honey), salt, black pepper, and celery seed (if using).
- Pour the vinaigrette over the cabbage mixture and toss well to coat all the ingredients.
- Cover the bowl and refrigerate for at least 1 hour before serving to allow flavors to meld.
- Toss the slaw again just before serving and enjoy it chilled.
Notes
For extra crunch, add shredded carrots or sliced radishes. Consider adding red pepper flakes for heat.
