Ingredients

  • 4 cups shredded green cabbage
  • 1 green bell pepper, chopped
  • 2 medium tomatoes, chopped
  • 1/2 small onion, finely diced
  • 2 tbsp chopped fresh parsley
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp sugar (or honey)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp celery seed (optional)

Instructions

  1. In a large bowl, combine the shredded cabbage, chopped bell pepper, chopped tomatoes, finely diced onion, and chopped parsley.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, sugar (or honey), salt, black pepper, and celery seed (if using).
  3. Pour the vinaigrette over the cabbage mixture and toss well to coat all the ingredients.
  4. Cover the bowl and refrigerate for at least 1 hour before serving to allow flavors to meld.
  5. Toss the slaw again just before serving and enjoy it chilled.

Notes

For extra crunch, add shredded carrots or sliced radishes. Consider adding red pepper flakes for heat.
