A quick and easy dish combining the fresh flavors of basil pesto, tender chicken, and crunchy vegetables, perfect for a light lunch or potluck.
Ingredients

- 12 oz rotini pasta (or your favorite spiral pasta)
- 2 cups cooked shredded chicken
- 1 cup cherry tomatoes, halved
- 2 cups fresh arugula
- 1/3 cup basil pesto
- 1/4 cup grated parmesan
- 2 tbsp toasted pine nuts
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine pasta, shredded chicken, tomatoes, and arugula.
- Add pesto and toss until everything is well coated.
- Sprinkle with parmesan and pine nuts.
- Season with salt and pepper to taste.
- Chill before serving or enjoy right away!
Notes
Best enjoyed chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for 2-3 days.
