- 2 boneless, skinless chicken breasts
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon brown sugar or honey
- 2 tablespoons soy sauce
- 1 cup cherry tomatoes
- 8 ounces orecchiette pasta or other short pasta
- 1 teaspoon kosher salt
- 1/2 cup pesto
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook until golden brown and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, add balsamic vinegar, brown sugar (or honey), soy sauce, and cherry tomatoes. Cook until tomatoes are softened.
- Slice the cooked chicken and return it to the skillet.
- Add the cooked pasta, pesto, spinach, and toss to combine. Cook until heated through.
- Serve topped with Parmesan cheese and fresh basil.
Notes
Use fresh ingredients when possible. For a little spice, add red pepper flakes when cooking the tomatoes.
