Description

A delicious and hearty dish combining tender chicken, vibrant cherry tomatoes, and flavorful pesto with pasta, perfect for family dinners or quick weeknight meals.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons soy sauce
  • 1 cup cherry tomatoes
  • 8 ounces orecchiette pasta or other short pasta
  • 1 teaspoon kosher salt
  • 1/2 cup pesto
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook until golden brown and cooked through.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add balsamic vinegar, brown sugar (or honey), soy sauce, and cherry tomatoes. Cook until tomatoes are softened.
  5. Slice the cooked chicken and return it to the skillet.
  6. Add the cooked pasta, pesto, spinach, and toss to combine. Cook until heated through.
  7. Serve topped with Parmesan cheese and fresh basil.

Notes

Use fresh ingredients when possible. For a little spice, add red pepper flakes when cooking the tomatoes.
