- 1 package (15 oz) pastry for a double-crust 9-inch pie
- 5 cups fresh peaches, sliced (about 1⁄2-inch thick)
- 1 egg, beaten
- 1 tablespoon lemon juice
- 1⁄4 cup all-purpose flour
- 1⁄4 cup cornstarch
- 3⁄4 cup white sugar
- 1⁄4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoons cold butter
Instructions
- Preheat the oven to 450°F (230°C).
- Toss the sliced peaches with lemon juice and let them drain for about 10-15 minutes.
- Place one pie crust in a 9-inch pie pan and brush it with the beaten egg.
- In a bowl, mix together the flour, cornstarch, white sugar, brown sugar, cinnamon, and salt. Fold this mixture in with the drained peaches.
- Pour the peach filling into the prepared crust. Dot the mixture with cold butter, cover with the top crust, brush with the remaining beaten egg, and cut slits to allow steam to escape.
- Bake at 450°F for 10 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes.
- Allow the pie to cool completely before slicing.
Notes
Serve warm or at room temperature, with vanilla ice cream or whipped cream.
