- 8 oz semi-sweet chocolate, chopped
- 1/4 cup powdered sugar
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract

- Whipped cream (optional, for garnish)
Instructions
- Melt the chocolate: In a heatproof bowl, melt the chopped semi-sweet chocolate over a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth. Set aside to cool slightly.
- Whip the cream: In a large bowl, beat the heavy whipping cream and powdered sugar with an electric mixer on medium-high speed until stiff peaks form.
- Combine the chocolate and cream: Once the melted chocolate has cooled slightly, fold it gently into the whipped cream. Add the peppermint extract, vanilla extract, and a pinch of salt, and stir until smooth and well-combined.
- Assemble the mousse cups: Spoon or pipe the mousse into small serving cups, filling each cup about three-quarters full.
- Chill: Refrigerate the mousse cups for at least 1-2 hours, or until set.
- Garnish and serve: Before serving, top each mousse cup with whipped cream, mini chocolate chips, and crushed peppermint candies for a festive finish.
Notes
For a more intense peppermint flavor, add a bit more peppermint extract. Ensure the chocolate has cooled before mixing it with the whipped cream.
