- 1 1/2 cups finely chopped pecans
- 1 1/2 cups graham cracker crumbs
- 1/4 cup brown sugar
- 1/2 cup melted unsalted butter
- 3 (8 ounce) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup butter (for topping)
- 1 cup brown sugar (for topping)
- 1/2 cup heavy cream (for topping)
- 1 1/2 cups chopped pecans (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Wrap a 9-inch springform pan in a double layer of heavy-duty aluminum foil to prevent leaks.
- For the crust, mix chopped pecans, graham cracker crumbs, brown sugar, and melted butter together. Press this mixture firmly into the bottom of the prepared pan.
- To make the filling, beat softened cream cheese and granulated sugar until smooth. Then, beat in sour cream and vanilla extract. Add eggs, one at a time, and beat well after each addition. Pour this filling over the crust.
- Place the springform pan inside a larger roasting pan. Fill the roasting pan with about 1 inch of hot water to create a water bath.
- Bake for 60-70 minutes or until the center is set. Turn off the oven and leave the cheesecake inside with the door slightly open for one hour. After that, remove it from the oven and the water bath. Let it cool completely on a wire rack.
- To make the praline topping, melt butter in a small saucepan. Stir in brown sugar and heavy cream, bringing it to a boil. Reduce the heat and simmer for 5 minutes, stirring occasionally. Remove from heat and stir in chopped pecans.
- Once the cheesecake is chilled, pour pecan praline topping over the cheesecake before serving.
Notes
Make sure the cream cheese is softened to avoid lumps. Use a water bath to prevent cracks and allow the cheesecake to cool completely before adding the topping.
