- 1 1/2 cups finely chopped pecans
- 1 1/2 cups graham cracker crumbs
- 1/4 cup brown sugar
- 1/2 cup melted unsalted butter
- 3 (8 ounce) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup heavy cream
- 1 1/2 cups chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and wrap a 9-inch springform pan in a double layer of aluminum foil.
- For the crust, mix chopped pecans, graham cracker crumbs, brown sugar, and melted butter together, then press into the bottom of the prepared pan.
- For the filling, beat softened cream cheese and granulated sugar until smooth. Add sour cream and vanilla, then eggs one at a time, mixing well.
- Pour the filling over the crust.
- Place the springform pan into a larger pan and fill the larger pan with 1 inch of hot water. Bake for 60-70 minutes, or until set.
- Turn off the oven, leave cheesecake inside for an additional hour, then cool completely on a rack.
- For the topping, melt butter in a saucepan, stir in brown sugar and heavy cream, bring to a boil, then simmer for 5 minutes and add chopped pecans.
- Once cooled, pour topping over cheesecake and serve.
Notes
Allow the cheesecake to cool completely before adding the praline topping. You can make this cheesecake a day or two in advance.
