A delightful side dish that combines the natural sweetness of sweet potatoes with honey and crunchy pecans.

- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil (or melted butter)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cinnamon
- 1/2 cup pecans, chopped
- 1/4 cup honey
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and cinnamon.
- Spread the sweet potatoes on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 20-25 minutes until tender, stirring halfway through.
- In the last 10 minutes of roasting, sprinkle the chopped pecans and drizzle the honey over the sweet potatoes.
- Return to the oven and roast until the pecans are toasted.
- Serve warm.
Notes
Cut the sweet potatoes into even-sized cubes for even cooking. You may toast the pecans lightly for enhanced flavor.
