A delightful side dish that combines the natural sweetness of sweet potatoes with honey and crunchy pecans.


Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil (or melted butter)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cinnamon
  • 1/2 cup pecans, chopped
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and cinnamon.
  3. Spread the sweet potatoes on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for about 20-25 minutes until tender, stirring halfway through.
  5. In the last 10 minutes of roasting, sprinkle the chopped pecans and drizzle the honey over the sweet potatoes.
  6. Return to the oven and roast until the pecans are toasted.
  7. Serve warm.

Notes

Cut the sweet potatoes into even-sized cubes for even cooking. You may toast the pecans lightly for enhanced flavor.
