Ingredients

  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup creamy peanut butter
  • 1520 Reese’s Peanut Butter Cups, chopped
  • 1 cup heavy cream
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • Caramel sauce, for drizzling
  • Whipped cream, for topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the chocolate cookie crumbs with melted butter until combined. Press this mixture into the bottom of a greased 9-inch springform pan.
  3. Bake for 10 minutes, then set aside to cool.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Mix in the sour cream and vanilla extract until fully incorporated.
  6. Add the eggs one at a time, beating well after each addition, then stir in the creamy peanut butter.
  7. Gently fold in the chopped Reese’s Peanut Butter Cups.
  8. Pour the filling over the cooled crust and smooth the top with a spatula.
  9. Bake for 55–60 minutes, or until the center is just slightly jiggly.
  10. Turn off the oven and let the cheesecake cool inside for 1 hour, then remove and let cool completely at room temperature.
  11. Refrigerate for at least 4 hours or overnight.
  12. Heat the heavy cream in a small saucepan until simmering, then stir in the chocolate chips and peanut butter chips until smooth.
  13. Drizzle the cooled topping over the chilled cheesecake, then add caramel sauce and whipped cream before serving.
  14. Slice and enjoy!

Notes

Ensure cream cheese is softened for easier mixing. Refrigerate overnight to set perfectly. For a chocolatey flavor, sprinkle chocolate chips on top before serving.
