A delightful dessert combining chocolate cake and creamy peanut butter, perfect for any occasion.

- 3 large eggs
- 3/4 cup granulated sugar
- 2 teaspoons brewed coffee or water
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 3/4 cup all-purpose flour
- Powdered sugar (for rolling)
- 2 ounces cream cheese, softened
- 1/3 cup peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 tablespoons + 2/3 cup heavy whipping cream
- 7 regular size Reese’s Peanut Butter Cups, chopped
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with foil and spray it with cooking spray.
- Beat the eggs at high speed for 3 minutes until frothy and dark yellow. Add sugar, brewed coffee or water, and vanilla extract. Mix well.
- Stir in cocoa powder, salt, and baking powder, then gradually mix in flour until just combined.
- Spread batter evenly in the prepared pan and bake for 10-15 minutes.
- While the cake is baking, prepare a clean towel with powdered sugar.
- Once the cake is done, turn it out onto the towel and roll it up to cool completely.
- For the filling, beat cream cheese and peanut butter until smooth. Add powdered sugar and vanilla extract.
- Stir in the chopped peanut butter cups.
- Unroll the cooled cake and spread the filling over it, then re-roll tightly.
- Chill for at least 1 hour.
- For the topping, heat chocolate chips and heavy whipping cream in a bowl. Stir until smooth and chill until thickened.
- Pour ganache over the cake and chill until set.
- Slice and serve chilled.
Notes
This cake can be made a day in advance for better flavor. Store in the fridge for up to 3 days or freeze for up to a month.
