A delightful dessert combining chocolate cake and creamy peanut butter, perfect for any occasion.


Ingredients

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 2 teaspoons brewed coffee or water
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup all-purpose flour
  • Powdered sugar (for rolling)
  • 2 ounces cream cheese, softened
  • 1/3 cup peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons + 2/3 cup heavy whipping cream
  • 7 regular size Reese’s Peanut Butter Cups, chopped
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with foil and spray it with cooking spray.
  2. Beat the eggs at high speed for 3 minutes until frothy and dark yellow. Add sugar, brewed coffee or water, and vanilla extract. Mix well.
  3. Stir in cocoa powder, salt, and baking powder, then gradually mix in flour until just combined.
  4. Spread batter evenly in the prepared pan and bake for 10-15 minutes.
  5. While the cake is baking, prepare a clean towel with powdered sugar.
  6. Once the cake is done, turn it out onto the towel and roll it up to cool completely.
  7. For the filling, beat cream cheese and peanut butter until smooth. Add powdered sugar and vanilla extract.
  8. Stir in the chopped peanut butter cups.
  9. Unroll the cooled cake and spread the filling over it, then re-roll tightly.
  10. Chill for at least 1 hour.
  11. For the topping, heat chocolate chips and heavy whipping cream in a bowl. Stir until smooth and chill until thickened.
  12. Pour ganache over the cake and chill until set.
  13. Slice and serve chilled.

Notes

This cake can be made a day in advance for better flavor. Store in the fridge for up to 3 days or freeze for up to a month.
