Description

A delightful dessert combining cheesecake and peanut butter cups with layers of creamy filling and a crunchy chocolate cookie crust.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup creamy peanut butter
  • 1520 Reese’s peanut butter cups, chopped (reserve half for topping)
  • 1 cup heavy cream
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • Caramel sauce for drizzling
  • Whipped cream for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine chocolate cookie crumbs with melted butter and press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add sour cream and vanilla extract, and mix well.
  5. Add eggs one at a time, beating after each addition.
  6. Stir in peanut butter until smooth, and gently fold in half of the chopped Reese’s peanut butter cups.
  7. Pour the filling over the prepared crust and smooth the top.
  8. Bake for 55-60 minutes until set and lightly browned.
  9. Turn off the oven, crack the door, and let cool in the oven for 1 hour.
  10. Let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  11. In a small saucepan, heat heavy cream until it begins to simmer.
  12. Remove from heat and stir in chocolate chips until melted and smooth.
  13. Let cool slightly and drizzle the ganache over the chilled cheesecake.
  14. Top with the remaining chopped Reese’s, peanut butter chips, and caramel sauce.
  15. Garnish with whipped cream if desired, slice, and enjoy!

Notes

To store the cheesecake, cover it well and keep it in the refrigerator for up to 5 days or freeze for up to 2 months. Thaw in the fridge before serving.
