A delightful dessert combining cheesecake and peanut butter cups with layers of creamy filling and a crunchy chocolate cookie crust.

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup creamy peanut butter
- 15–20 Reese’s peanut butter cups, chopped (reserve half for topping)
- 1 cup heavy cream
- 1/2 cup chocolate chips
- 1/2 cup peanut butter chips
- Caramel sauce for drizzling
- Whipped cream for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Combine chocolate cookie crumbs with melted butter and press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add sour cream and vanilla extract, and mix well.
- Add eggs one at a time, beating after each addition.
- Stir in peanut butter until smooth, and gently fold in half of the chopped Reese’s peanut butter cups.
- Pour the filling over the prepared crust and smooth the top.
- Bake for 55-60 minutes until set and lightly browned.
- Turn off the oven, crack the door, and let cool in the oven for 1 hour.
- Let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- In a small saucepan, heat heavy cream until it begins to simmer.
- Remove from heat and stir in chocolate chips until melted and smooth.
- Let cool slightly and drizzle the ganache over the chilled cheesecake.
- Top with the remaining chopped Reese’s, peanut butter chips, and caramel sauce.
- Garnish with whipped cream if desired, slice, and enjoy!
Notes
To store the cheesecake, cover it well and keep it in the refrigerator for up to 5 days or freeze for up to 2 months. Thaw in the fridge before serving.
