- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mini Reese’s Pieces candies
- 1/4 cup peanut butter (for stuffing)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, creamy peanut butter, granulated sugar, and brown sugar together until light and fluffy (about 3 minutes).
- Add the egg and vanilla extract, mixing until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the mini Reese’s Pieces candies.
- Scoop a tablespoon of dough, flatten it in your hand, and place 1/2 teaspoon of peanut butter in the center. Fold the dough around the peanut butter and seal it inside. Roll it into a ball and place it on the prepared baking sheet.
- Repeat this process with the remaining dough and peanut butter, spacing the cookies about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Serve warm for a gooey peanut butter experience. Store in an airtight container at room temperature for about a week.
