Peanut Butter Cheesecake

Description

A rich and creamy dessert combining peanut butter and cream cheese with a crunchy graham cracker crust.


Ingredients

  • 1 sleeve of graham crackers, crushed
  • 1 tablespoon sugar
  • 4 tablespoons butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter
  • 1 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • 1 container cream cheese frosting
  • Peanut Butter Cups (for decoration)

Instructions

  1. Line the bottom of a springform pan with parchment paper and set aside.
  2. Crush graham crackers in a food processor until they turn into crumbs. Add sugar and pulse to blend.
  3. Melt butter in the microwave and pour it into the bowl with the graham cracker crumbs. Stir until crumbs are well coated.
  4. Press the crumb mixture evenly into the bottom of the prepared springform pan using the bottom of a glass. Place the pan in the freezer to set.
  5. In a stand mixer, blend softened cream cheese and sugar on low speed until smooth. Scrape down the sides and blend on medium-high until creamy.
  6. Add Greek yogurt and vanilla extract, blending until smooth.
  7. Add peanut butter and powdered sugar. Blend on low until combined, then scrape down the sides and blend on high until smooth.
  8. Gently fold in mini chocolate chips.
  9. Pour the cheesecake filling over the crust and smooth the top. Return the pan to the freezer and let the cheesecake set overnight.
  10. About 30 minutes before serving, pipe cream cheese frosting around the edge of the cheesecake.
  11. Cut Peanut Butter Cups in half and place them between frosting dollops, then return the cheesecake to the freezer until ready to serve.
  12. Cut into 2-inch pieces and serve chilled. Enjoy!

Notes

Best served chilled. Store leftovers in the freezer for up to a month.
