Description

Delicious dessert bars combining sweet peaches and a creamy cheesecake layer, perfect for summer picnics and gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 (21-ounce) can peach pie filling
  • 1 (8-ounce) block cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. In a large mixing bowl, cream together 1 cup of softened butter and 2 cups of sugar until light and fluffy.
  3. Add 4 eggs and 2 teaspoons of vanilla extract, mixing well.
  4. Gradually incorporate 3 cups of flour and 1 teaspoon of salt until just combined.
  5. Spread half of this batter evenly in the prepared pan.
  6. In another bowl, beat together the 8 ounces of softened cream cheese, 1/2 cup of sugar, 1 teaspoon of vanilla, and 1 egg until smooth.
  7. Spread the cheesecake mixture over the batter in the pan.
  8. Spoon the 21 ounces of peach pie filling over the cheesecake layer.
  9. Add dollops of the remaining batter on top of the peach filling.
  10. Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  11. Allow the bars to cool completely in the pan.
  12. In a small bowl, combine 1 cup of powdered sugar, 2 tablespoons of milk, and 1 teaspoon of almond extract. Mix until smooth.
  13. Drizzle the glaze over the cooled bars. Cut into squares or bars and enjoy.

Notes

Store in an airtight container in the refrigerator for up to 5 days, or freeze for later enjoyment.
